NUTR 725 - Nutrition and Health (3 units) Nutrition in various disease states. Focuses on research studies and methodology in the current literature.
Units of Lecture: 3 Offered: Every Fall - Even Years
Student Learning Outcomes Upon completion of this course, students will be able to: 1. describe on-going efforts to monitor the nutritional health of the U.S. populace; and explain the limitations and strengths of select approaches. 2. delineate relationships among food and nutrient intakes; dietary and physical activity patterns; food environments; and chronic disease rates in the U.S. 3. explain the significance and formulation of the Dietary Guidelines for Americans; identify key stakeholders and their positions; and explain the implications for these stakeholders. 4. describe policy development and implementation including points of influence, stakeholders, and key federal agencies – with an emphasis on nutrition policy. 5. delineate how select federal nutrition programs operate and function to address nutrition needs – including recent and/or proposed modifications. 6. explain the history, characteristics and impact of specific food/nutrition policies.
