NUTR 210 - World Cuisine (1 to 3 units) Introduction to a local cuisine in a kitchen setting. Preparations of dishes and proper cooking techniques are taught. Readings and lectures on local food culture support the cooking instruction.

Student Learning Outcomes Upon completion of this course, students will be able to: 1. identify ingredients, equipment and preparation techniques that are characteristic of the local cuisine. 2. provide an overview of the local diet, paying special attention to prominent food combinations and the seasonality of ingredients. 3. prepare the dishes covered in class independently. 4. compare and contrast local eating customs and etiquette with one’s own cultural food habits.
